Ingredients
- 1 medium green capsicum, cut into thin strips
- 2 medium tomatoes, seeded and cut into thin strips
- 2 medium onions, sliced
- 1 small head iceberg lettuce
- 1/3 cup crushed roasted peanuts
For Dressing
- 2 tablespoons lemon juice
- 8-10 fresh coriander stems
- 6 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon crushed black peppercorns
- 2 tablespoons chopped fresh coriander leaves
- Salt to taste
Method
- Place capsicum and tomatoes in a bowl and add onion, torn iceberg lettuce leaves.
- To make the dressing, roughly chop coriander stems and place in another bowl. Add olive oil, honey, crushed peppercorns, coriander leaves and salt and mix well.
- Add dressing to the vegetables and mix well.
- Garnish with crushed peanuts and serve chilled.
