Ingredients list for Melon And Mustard Pickle
- 2 large honeydew melons, peeled and cut into 1 inch cubes
- 3 cups sugar
- 2 tablespoons mustard powder
- 1 tablespoon fresh turmeric, ground
- 2 teaspoons ginger paste
- 2 tablespoons cornflour
- 1¼ cups white wine vinegar
Method
- Put the sugar in a large sauce non-stick pan along with one and half cups of water and the melons and cook till they turn translucent.
- Mix together mustard powder, ground turmeric, ginger paste, cornflour and half the quantity of white wine vinegar.
- Boil the remaining vinegar in another non-stick pan, add the above mixture and cook for three to four minutes or until the mixture thickens.
- Remove from heat and add the melon cubes along with sugar syrup. Allow to cool down to room temperature. Store in a clean jar, seal immediately.
