Ingredients list for Melon And Mustard Pickle

  • 2 large honeydew melons, peeled and cut into 1 inch cubes        
  • 3 cups sugar                                
  • 2 tablespoons mustard powder                        
  • 1 tablespoon fresh turmeric, ground                    
  • 2 teaspoons ginger paste                            
  • 2 tablespoons cornflour                            
  • 1¼ cups white wine vinegar

Method

  1. Put the sugar in a large sauce non-stick pan along with one and half cups of water and the melons and cook till they turn translucent.
  2. Mix together mustard powder, ground turmeric, ginger paste, cornflour and half the quantity of white wine vinegar.
  3. Boil the remaining vinegar in another non-stick pan, add the above mixture and cook for three to four minutes or until the mixture thickens.
  4. Remove from heat and add the melon cubes along with sugar syrup. Allow to cool down to room temperature. Store in a clean jar, seal immediately.
