Ingredients list for Malpua
- 1/4 cup Reduced milk (khoya)
- 300 grams Sugar
- 30 grams Refined flour
- as required Milk
- to deep fry Ghee
- to garnish Pistachios crushed
- Sugar syrup
- 300 grams Sugar
- a few strands Saffron dissolved in 1 tablespoon milk
Method
- Take milk in a bowl, add sugar, refined flour and milk and whisk well to make a smooth batter. Rest the batter for 3 hours.
- To make sugar syrup, take sugar in a non-stick pan, add 1 cup water and stir till the sugar melts. Cook further till the syrup comes to a boil. Add the saffron and mix well. Transfer into a bowl.
- Heat ghee in a wide mouthed flat-bottom pan. Pour a little batter to form a pancake. Pour hot ghee over it and turn over. When both sides are properly done, drain and immerse in the sugar syrup. Make more malpuas similarly.
- Drain them from the syrup and place on serving plates, garnish with pistachios and serve warm.
