Ingredients for Malay Bot Cher Kahav (Malai Ki Khubani With Kahwa) Recipe

  • Full cream milk 1 1/2 litres

  • Apricots soaked in saffron water overnight and deseeded 10-12

  • Sugar 1/4 cup

  • Green cardamom powder 1/2 teaspoon

  • Almonds sliced 10

  • Saffron (kesar) 5-8

  • Pistachios sliced 10

  • Jaggery (gur) 1/2 cup

Method

Step 1

Bring milk to a boil in a deep non stick pan on medium heat.

Step 2

Reduce heat and simmer till it reduces ⅓ the quantity.

Step 3

Stir at regular intervals of 3-4 minutes, but not continuously.

Step 4

While stirring, scrape small cream chunks deposited on the side of pan into the milk.

Step 5

Add sugar and stir till it dissolves.

Step 6

Add cardamom powder, sliced almonds, saffron and sliced pistachios and mix well. Cook till thick.

Step 7

Remove from heat and refrigerate for atleast 2 hours.

Step 8

Put the rabri in a piping bag and fill it in the soaked apricot.

Step 9

Heat a non stick pan, add the jaggery and let it melt.

Step 10

Dip the stuffed apricot in the melted jaggery and serve hot along with kahwa.
