Ingredients list for Madelines

  • 1 cup Refined flour (maida)
  • 3 Eggs
  • ½ cup Sugar
  • 2 tablespoons brown sugar/jaggery
  • ½ cup Unsalted butter
  • 1 teaspoon Vanilla essence
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt
  • 1 teaspoon Lemon rind

Method

  1. Preheat oven at 180 ° C.
  2. Break 3 eggs into a bowl. Add sugar, brown sugar and vanilla essence and beat till the mixture reaches a ribbon stage.
  3. Put butter in a bowl and melt it in the microwave. Take it out of the microwave and let it cool slightly.
  4. Sieve refined flour, salt and baking powder into the egg mixture and fold in lightly.
  5. Add melted butter and lemon rind and mix well.
  6. Pour the mixture into piping bags and pipe into madeleine moulds.
  7. Bake in the preheated oven for 10-15 minutes.
  8. Take the moulds out of the oven, cool down to room temperature and demould. Serve.
