Ingredients for MUSHROOM AVOCADO TOAST - skk Recipe

  • Dried shiitake mushrooms soaked and sliced 5-6

  • Shimeji mushrooms sliced 8-10

  • Button mushrooms sliced 5-6

  • Oyster mushrooms sliced 6-8

  • Large avocado halved and seeded 1

  • Multigrain bread slices toasted 8

  • Olive oil 1 tablespoon

  • Garlic finely chopped 2 teaspoons

  • Medium onion finely chopped 1

  • Salt to taste

  • Black peppercorns crushed to taste

  • Balsamic vinegar 1 tablespoon

  • Fresh parsley leaves chopped 1 tablespoon

  • Dijon mustard sauce as required

Method

Step 1

Heat olive oil in a non-stick pan, add garlic and sauté for 1 minute. Add onion and sauté till translucent. Add shitake, shimeji mushrooms, button mushrooms and oyster mushrooms and mix. Add salt and crushed black peppercorns, mix and sauté for 3-4 minutes.

Step 2

Add balsamic vinegar and mix well. Add parsley leaves, mix well and saute for 1 minute. Take it off the heat.

Step 3

Place the toasted bread slices on a serving plate, apply mustard sauce evenly. Scoop out some avocado flesh, place it on the toasts. Mash it with a fork and spread it evenly. Sprinkle salt and crushed black pepper. Spread a spoonful of the mushroom mixture on each bread slice and serve immediately.
