History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for MANGO KULFI Recipe

  • Ripe mango puree 1 cup

  • Milk 1 litres

  • Condensed milk 1/2 cup

  • Sugar 1/4 cup

  • Green cardamom powder 1/4 teaspoon

  • Pistachios blanched, peeled and crushed 1/2 cup

Method

Step 1

Heat milk in a deep non-stick pan on medium heat, stirring frequently, till it boils. Reduce heat and cook, stirring frequently, till it reduces.

Step 2

Add condensed milk and sugar, mix and cook for 1-2 minutes. Add green cardamom powder, mix and cook till the mixture thickens. Take the pan off the heat and let it cool down to room temperature.

Step 3

Transfer the thickened milk into a bowl, add mango puree and blend, with an electric hand blender, into smooth mixture.

Step 4

Pour the mixture into kulfi moulds till ¾ full, insert ice cream stick in the center of each mould and freeze for 6-8 hours.

Step 5

Spread pistachios on a plate.

Step 6

Demould the kulfis, coat the top half of each kulfi with pistachios and serve immediately.
