Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lasooni Baingan Bharta Recipe

  • Large green brinjals 2

  • Garlic 8-10 cloves

  • Oil 1 tablespo to grease

  • Green chillies 6-8

  • Cumin seeds 1/2 teaspoon

  • Ginger chopped 1 tablespoon

  • Medium onion chopped 1

  • Peanuts roasted, peeled and crushed 1/2 cup

  • Fresh coriander leaves chopped 2 tablespoons

  • Salt to taste

  • Bhakri to serve

Method

Step 1

Grease the brinjal lightly with some oil and roast it over open flame till the skin chars and the brinjal gets cooked. Set it aside on a plate. Similarly, grease and roast the green chillies and garlic till they too are lightly charred. Set them aside on another plate.

Step 2

Transfer the green chillies and garlic in a mortar and pound it coarsely with a pestle.

Step 3

Peel the brinjal and mash the flesh

Step 4

Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add ginger, mix and sauté for 30 seconds. Add onion, mix and sauté till golden brown.

Step 5

Add the pounded green chilli-garlic mixture, mix and sauté for 2-3 minutes.

Step 6

Add mashed brinjal, mix well and cook for 2-3 minutes. Add peanuts, mix well and cook for 2-3 minutes.

Step 7

Add 1 tbsp coriander leaves and mix well. Add salt, mix well and continue to cook for 1 minute.

Step 8

Transfer into a serving bowl, garnish with remaining coriander leaves and serve hot with bhakris.
