Ingredients list for Lasooni Baingan Bharta

  • 2 Large green brinjals
  • 8-10 cloves Garlic
  • 1 tablespo to grease Oil
  • 6-8 Green chillies
  • 1/2 teaspoon Cumin seeds
  • 1 tablespoon Ginger chopped
  • 1 Medium onion chopped
  • 1/2 cup Peanuts roasted, peeled and crushed
  • 2 tablespoons Fresh coriander leaves chopped
  • to taste Salt
  • to serve Bhakri


  1. Grease the brinjal lightly with some oil and roast it over open flame till the skin chars and the brinjal gets cooked. Set it aside on a plate. Similarly, grease and roast the green chillies and garlic till they too are lightly charred. Set them aside on another plate.
  2. Transfer the green chillies and garlic in a mortar and pound it coarsely with a pestle.
  3. Peel the brinjal and mash the flesh
  4. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add ginger, mix and sauté for 30 seconds. Add onion, mix and sauté till golden brown.
  5. Add the pounded green chilli-garlic mixture, mix and sauté for 2-3 minutes.
  6. Add mashed brinjal, mix well and cook for 2-3 minutes. Add peanuts, mix well and cook for 2-3 minutes.
  7. Add 1 tbsp coriander leaves and mix well. Add salt, mix well and continue to cook for 1 minute.
  8. Transfer into a serving bowl, garnish with remaining coriander leaves and serve hot with bhakris.
