Lasagna Rolls

Spinach-ricotta cheese mixture rolled in lasagna sheets, topped with tomato sauce, mozzarella and parmesan cheese and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • ½ small bunch spinach leaves (palak), blanched and chopped
  • ½ cup grated mozzarella cheese 
  • 2-3 tablespoons grated parmesan cheese 
  • 4 lasagna sheets, blanched
  • 1 tablespoon oil
  • 1 tablespoon chopped garlic 
  • Salt to taste
  • Crushed black peppercorns to taste
  • ¼ cup ricotta cheese
  • Readymade tomato sauce as required

Method

  1. Preheat oven to 180º C.
  2. Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add spinach and mix.
  3. Add salt, mix and cook for 1 minute. Add crushed peppercorns, mix and cook for 30 seconds. Remove from heat and cool.
  4. Add ricotta cheese and mix. Fill a piping bag with spinach-cheese mixture.
  5. Place each lasagna sheet on the worktop and cut into half horizontally. Pipe out spinach-cheese mixture on each strip, spread and roll.
  6. Line a glass baking tray with lasagna rolls and spread some tomato sauce on top. Put mozzarella cheese and parmesan cheese on top.
  7. Put the dish on a baking tray, place the tray in the preheated oven and bake for 10-15 minutes.
  8. Serve hot.
