Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Laganshaala Recipe

  • Sweet potato cubed 3-4 medium

  • Carrot 2 medium

  • Carrots cubed 2 small

  • Cauliflower 1/2 medium

  • Tomatoes quartered 2 medium

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Whole dry red chillies broken 2-3

  • Onions sliced 2 medium

  • Garlic sliced 1 teaspoon

  • Green chillies slit 2-3

  • Salt to taste

  • Worcestershire sauce 1 tablespoon

  • Vinegar 1 teaspoon

  • Sugar 1 teaspoon

Method

Step 1

Heat oil in a thick-bottomed pan and add cumin and red chillies. When they begin to change colour add onions and sauté on medium heat for two minutes or till pink.

Step 2

Add garlic and green chillies and sauté further for a minute. Add potatoes, sweet potatoes, carrots, cauliflower, tomatoes and salt along with two to three cups of water and cover and cook on low heat till almost done.

Step 3

Add Worcestershire sauce, vinegar and sugar, stir and cook for another five to ten minutes till vegetables are done and water is reduced to less than half. Serve hot.
