Ingredients list for Kiwi Lime Muffins

  • 1 Kiwi
  • 1 teaspoon Lemon zest grated
  • 1 Ripe banana
  • 1 2/3 cups Refined flour (maida)
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 3 Eggs
  • 170 grams Powdered sugar
  • 1 teaspoon Vanilla essence
  • 3 tablespoons Rooh Afza
  • 2/3 cup Melted butter

Method

  1. Preheat the oven at 220°C. Blend kiwi and banana into a purée.
  2. Sieve together refined flour, baking soda and baking powder into a bowl.
  3. In another bowl break eggs, add sugar, little by little, and whisk well.
  4. Add vanilla essence, rooh afza , melted butter, banana-kiwi purée and flour. Fold in the mixture in cut and fold method.
  5. Pour the batter into silicon moulds and sprinkle some lemon zest on top.
  6. Bake in the preheated oven at 180°C for 20 to 22 minutes.
  7. Remove from oven and cool. Remove from the moulds and serve.
