Ingredients
- 4-5 chicken drumsticks
- Salt to taste
- ½ teaspoon turmeric powder
- 1 lemon, cut into half
- ½ cup hung yogurt
- 2 tablespoons kasundi mustard paste
- 1 tablespoon ginger-garlic paste
- 2 tablespoons mustard oil
- ½ teaspoon dried fenugreek leaves powder
- 50 grams butter, cut into small cubes
- Melted butter for basting
- Green chutney to serve
- Salad to serve
- Lemon wedges to serve
Method
- Preheat the oven at 200˚C.
- Make incisions in the chicken drumsticks and place them in a bowl. Sprinkle salt, add turmeric powder and squeeze the juice of ½ lemon and mix well. Set aside to marinate for 10-15 minutes.
- In another bowl, add hung yogurt, kasundi mustard paste, ginger-garlic paste, mustard oil, dried fenugreek leaves powder, and mix well.
- Add salt and squeeze the juice of the remaining lemon, mix till well combined. Add the chicken drumsticks and coat well in the prepared mixture. Set aside 1-2 hours.
- Grease a baking tray with butter and place the marinated chicken drumsticks on it.
- Place a few cubes of butter on top of each chicken drumstick and bake for 25-30 minutes, turning and basting with butter occasionally.
- Remove the chicken from the oven and baste with melted butter and serve hot with salad, green chutney and lemon wedges.
