Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for KAJU KHOYA BESAN LADDOO Recipe

  • Cashew nuts , coarsely powdered 1/2 cup

  • Khoya/mawa , grated 2 cups

  • Coarse gram flour (besan) (jada besan) 1 cup

  • Ghee 1/3 cup

  • Poppy seeds (khuskhus/posto) 2-3 teaspoons

  • Green cardamom powder 1/2 teaspoon

  • Powdered sugar 1 cup


Step 1

Heat ghee in a wide non-stick pan. Add coarse gram flour and mix well. Continuously roast on low heat till it turns golden brown and fragrant.

Step 2

Switch the heat off, add the grate khoya and mix it till well combined.

Step 3

Add poppy seeds, green cardamom powder, and cashew nuts powder and sauté on low heat for 1-2 minutes.

Step 4

Transfer the roasted mixture on to a large bowl and allow to cool to room temperature.

Step 5

Add the powdered sugar and mix well with your hand. Take small portions of the mixture and tightly roll it into a ball. This is a laddoo.

Step 6

Arrange the laddoos on a serving plate. Serve.
