Ingredients
- 100 grams refined flour
- 60 grams castor sugar
- ¼ cup butter
- ½ teaspoon vanilla essence
- 30 grams cornflour
- 2 tablespoons milk
- Pineapple jam as required
Method
- Take castor sugar in a bowl, add butter and beat with an electric beater till light. Add vanilla essence and beat well.
- Sift together refined flour and cornflour into the bowl. Add milk and mix till well combined into a dough. Wrap the dough in cling wrap and chill in the refrigerator for 2-3 hours.
- Preheat the oven to 180° C.
- Bring out the dough out of the refrigerator and roll it out into ½ cm thick sheet. Cut into roundels with a medium sized cookie cutter.
- Cut out center of half the roundels with a smaller cookie cutter to make rings.
- Spread some pineapple jam on each complete roundel, place a ring on top of each. Place them on a baking tray.
- Keep the tray in the preheated oven and bake for 20-25 minutes. Remove the tray from oven and let the cookies cool.
- Arrange them on a serving plate and serve.
