Ingredients for Jam Cookies Recipe

  • Refined flour 100 grams

  • Castor sugar 60 grams

  • Butter 1/4 cup

  • Vanilla essence 1/2 teaspoon

  • Cornflour 30 grams

  • Milk 2 tablespoons

  • Pineapple jam as required

Method

Step 1

Take castor sugar in a bowl, add butter and beat with an electric beater till light. Add vanilla essence and beat well.

Step 2

Sift together refined flour and cornflour into the bowl. Add milk and mix till well combined into a dough. Wrap the dough in cling wrap and chill in the refrigerator for 2-3 hours.

Step 3

Preheat the oven to 180° C.

Step 4

Bring out the dough out of the refrigerator and roll it out into ½ cm thick sheet. Cut into roundels with a medium sized cookie cutter.

Step 5

Cut out center of half the roundels with a smaller cookie cutter to make rings.

Step 6

Spread some pineapple jam on each complete roundel, place a ring on top of each. Place them on a baking tray.

Step 7

Keep the tray in the preheated oven and bake for 20-25 minutes. Remove the tray from oven and let the cookies cool.

Step 8

Arrange them on a serving plate and serve.
