By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Main Ingredients Refined flour, Castor sugar Cuisine Fusion Course Snacks and Starters Prep Time 3.30-4 hour Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Jam Cookies 100 grams Refined flour 60 grams Castor sugar 1/4 cup Butter 1/2 teaspoon Vanilla essence 30 grams Cornflour 2 tablespoons Milk as required Pineapple jam Method Take castor sugar in a bowl, add butter and beat with an electric beater till light. Add vanilla essence and beat well. Sift together refined flour and cornflour into the bowl. Add milk and mix till well combined into a dough. Wrap the dough in cling wrap and chill in the refrigerator for 2-3 hours. Preheat the oven to 180° C. Bring out the dough out of the refrigerator and roll it out into ½ cm thick sheet. Cut into roundels with a medium sized cookie cutter. Cut out center of half the roundels with a smaller cookie cutter to make rings. Spread some pineapple jam on each complete roundel, place a ring on top of each. Place them on a baking tray. Keep the tray in the preheated oven and bake for 20-25 minutes.
