Jalapeno Potato Cups

Baby potato halved, scooped out, deep-fried, filled with jalapeno-cheese mixture and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Jalapeno Potato Cups

  • 2-3 Jalapenos seeded and finely chopped
  • 20-24 Baby potatoes
  • for deep-frying Oil
  • ¼ cup Cheddar cheese grated
  • 2 tablespoons Mozzarella cheese grated
  • 1 teaspoon Red chilli flakes
  • to taste Salt
  • to taste Crushed black peppercorns

Method

  1. Preheat oven to 180° C.
  2. Halve the baby potatoes. Scoop out the flesh in a bowl. Reserve the shells and flesh.
  3. Heat sufficient oil in a pan. Deep-fry potato shells till golden. Drain on absorbent paper.
  4. Put cheddar cheese, mozzarella cheese, jalapenos, red chilli flakes, salt and crushed peppercorns in another bowl and mix well.
  5. Stuff fried shells with cheese mixture and place on a baking tray. Place the tray in the preheated oven and bake for 10-15 minutes.
  6. Serve.
