In Japanese cuisine consists of food is cooked in a specific way based on the culture and tradition of Japan. The traditional cuisine of Japan comprises of rice with an emphasis on seasonal ingredients. The side dishes often consist of fish, pickled vegetables and vegetables cooked in broth. Fish is common in the traditional cuisine. It is often grilled, but it may also be served raw or dipped in a light batter and deep-fried.
Japanese cuisine has now become popular throughout the world. As of 2011, Japan has overtaken France in number of Michelin starred restaurants and has maintained the title ever since.

Ingredients for JAPANESE CREAM BUN - skk Recipe

  • Butter for pan fr

  • Custard

  • Milk 250 millilitres

  • Butter 15 grams

  • Castor sugar 50 grams

  • Egg yolks 3

  • Refined flour 20 grams

  • Bun

  • Refined flour 380 grams

  • Castor sugar 60 grams

  • Salt 5 grams

  • Dried yeast 5 grams

  • Warm milk 80 millilitres

  • Heavy cream 20 millilitres

  • Egg beaten 80 grams

  • Unsalted butter 40 grams

Method

Step 1

To make the custard, put butter and milk into a double boiler and whisk till the butter melts. Add castor sugar and whisk till it dissolves.

Step 2

Add egg yolks, one by one, and whisk till a ribbon consistency is achieved. Add flour and whisk till the mixture thickens. Remove from heat and set aside to cool.

Step 3

To make the buns, take flour in a mixing bowl, add castor sugar, salt, yeast, milk and cream and mix well. Add eggs and mix well. Add a little water and mix well. Add butter and knead into a soft dough. Set aside till the dough doubles in volume.

Step 4

Dust some flour on the worktop and divide the dough into equal portions and shape them into balls. Roll out each ball into discs.

Step 5

Place a spoonful of custard in the centre of each disc, bring the edges together and press to seal. Shape them into balls again and press slightly.

Step 6

Heat some butter in a non-stick pan. Place the buns in it, a few at a time, and pan-fry, turning sides, till evenly golden on both sides.

Step 7

Arrange them on a serving platter and serve hot.
