Ingredients 

  • 4-5 large tomatoes
  • Salt to taste
  • 2 tablespoons olive oil
  • 6-8 garlic cloves, chopped
  • 2 medium onions, chopped
  • Black pepper powder to taste
  • 1/4 teaspoon red chilli flakes
  • 1 tablespoon sugar
  • 1 teaspoon dried oregano
  • 8-9 fresh basil leaves

Method

  1. Heat sufficient water in a deep non-stick pan. Add salt and bring it to a boil.
  2. Remove the eye of tomatoes, make a cross at the bottom, put in the boiling water and blanch for a minute.
  3. Remove the tomatoes from the boiling water and put them in ice cold water. Peel and puree them.
  4. Heat olive oil in a non-stick pan. Add garlic and sauté for half a minute. Add onion and sauté till it turns soft.
  5. Add pureed tomatoes, mix and add salt. Mix well and simmer for 5-10 minutes. Add salt, pepper powder, chilli flakes, sugar and oregano and mix well. Cook for 2-3 minutes.
  6. Shred basil leaves.
  7. Switch off heat and add shredded basil leaves. Mix well.
  8. Use as required.
