Ingredients
- 1 large iceberg lettuce head
- 4-5 fresh button mushrooms
- 1 small yellow capsicum
- 1 small red capsicum
- 1 medium tomato
- 10-12 French beans, blanched
- 8 stuffed olives
- Fresh basil leaves for garnishing
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- Salt to taste
- 5-6 black peppercorns, crushed
Method
- Dice all vegetables and olives and mix them together in a large bowl. For the dressing, mix together the balsamic vinegar, olive oil, salt and crushed peppercorns. Pour over the salad and toss thoroughly to mix. Garnish with fresh basil sprigs.
