Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Hummus Recipe

  • Chickpeas , soaked overnight and boiled 1 cup

  • Garlic 7-8 cloves

  • Lemon juice 1 tablespoon

  • Tahini 2 tablespoons

  • Salt to taste

  • Olive oil for drizzling

  • Paprika powder to sprinkle

  • Black olives , pitted and sliced 2-3 to garnish

  • Lavash to serve

Method

Step 1

To make hummus, put chickpeas in a blender jar, add garlic cloves, lemon juice, tahini, salt and some olive and blend into a smooth paste.

Step 2

Transfer paste to a serving dish, drizzle olive oil on top. Garnish with paprika powder and sliced olives and serve with lavash.
