Ingredients list for Grilled Zucchini And Cottage Cheese Rolls

  • 1 medium Green zucchini sliced vertically
  • 1/2 cup Paneer (cottage cheese) grated
  • 1 medium Yellow zucchini sliced vertically
  • to taste Salt
  • for grilling Oil
  • 1/4 cup Walnuts chopped
  • 2 tablespoons Parmesan cheese grated
  • 1/4 teaspoon Crushed black peppercorns
  • 1/4 teaspoon Lemon rind grated
  • 2 tablespoons Lemon juice
  • a few Fresh mint leaves chopped

Method

  1. Add salt to zucchini slices and set aside for 5-7 minutes. Place slices on a griller and drizzle little oil on top. Cover and grill on both sides for 2-3 minutes. Remove from heat and cool down to room temperature.
  2. Mix cottage cheese, walnuts, cheese, crushed peppercorns, salt, lemon rind, lemon juice and mint leaves well in a bowl. Place grilled zucchini slices on worktop.
  3. Place some cottage cheese mixture on one side of each and roll tightly.
    Serve immediately.
