Ingredients list for Greek Style Lamb
- 4 Lamb chops
- 4 medium Potatoes thinly sliced with skin
- 4 large Tomatoes thinly sliced
- 1 Brinjal thinly sliced
- 2 teaspoons Garlic chopped
- 2 tablespoons Fresh oregano chopped
- 12-16 Black olives pitted and halved
- 2 teaspoons Mustard paste
- Olive oil 5 tablespoons + for drizzling
- to taste Salt
- to taste Crushed black peppercorns
- 100 grams Feta cheese crumbled
Method
- Preheat the oven to 200° C.
- Layer half the potato, tomato and brinjal in a baking dish. Top with half the garlic, oregano, olives and mustard paste. Drizzle five tablespoons of olive oil on top and sprinkle salt and crushed peppercorns on top.
- Sprinkle the feta cheese on top and repeat the layers with the remaining ingredients.
- Place the baking dish in the preheated oven and bake for twenty to twenty-five minutes.
- Place the lamb chops on top, drizzle little more olive oil on top and sprinkle little more salt and crushed peppercorns on top. Bake for another fifteen to twenty minutes or till the lamb is tender.
- Remove from heat and allow to rest for a while. Serve hot.
