Ingredients
- 1 gherkin
- 1 tablespoons capers
- 1/4 cup skimmed milk yogurt
- 15-18 fresh coriander sprigs
- 1½ teaspoo fresh parsley chopped
- 3 teaspoons lemon juice
- Salt to taste
- Crushed black peppercorns to taste
- 1 1/4 teaspoons castor sugar
Method
- Chop coriander leaves and place in a bowl. Add chopped parsley.
- Chop gherkin and add.
- Roughly chop capers and add alongwith lemon juice, salt, crushed peppercorns, castor sugar and yogurt and mix well.
- Garnish with chopped parsley and serve as an accompaniment with your choice of starter.
