Ganthia Ni Kadhi

Ingredients list for Ganthia Ni Kadhi

  • 1 1/2 cups bhavnagri ganthia
  • 2 cups yogurt
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 3 tablespoons Gram flour (besan)
  • Salt to taste
  • 2 tablespoons Oil
  • 1 teaspoon mustard seeds
  • 2 tablespoons coriander leaves
  • for garnish coriander sprig
  • to serve steamed rice

Method

  1. Take yogurt in a bowl, add turmeric powder, red chilli powder, gram flour, salt and 2½ cups water and whisk till well combined.
  2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Stir in ganthia and boil for 8-10 minutes. Add chopped coriander and take the pan off the heat.
  3. Transfer kadhi into a serving bowl and garnish with coriander sprig. Serve hot with steamed rice.
