Ingredients for Fruit Tartlets Recipe

  • Refined Flour

  • Butter 125 grams

  • Brown sugar 3 tablespoons

  • Refined flour (maida) 250 grams

  • Cocoa powder 3 tablespoons

  • Salt a pinch

  • FOR FILLING

  • Mixed fruit jam 4 tablespoons

  • Lemon juice 1 tablespoon

  • Double cream whipped 1 cup

  • Kiwi fruit cut into small cubes 2

  • Grapes halved 15-20

  • Apple cut into small cubes 1 large

  • Bananas cut into small cubes 2 medium

  • Fresh mint leaves for garnish

Method

Step 1

For the pastry combine butter, brown sugar and cocoa over low heat.

Step 2

When the butter has melted, remove from heat and pour over the flour.

Step 3

Add very little chilled water and bind well to make stiff dough.

Step 4

Gather into a ball, cover with cling wrap and chill the dough in the refrigerator for atleast thirty minutes.

Step 5

Preheat the oven to 180°C. Grease eight to ten tartlet tins.

Step 6

Roll out the dough between two sheets and stamp out four inch diameter rounds with a fluted cutter.

Step 7

Line the tartlet tins with dough. Prick the bottoms and chill for fifteen minutes.

Step 8

Bake blind for ten minutes, and then bake again for another ten minutes.

Step 9

Leave to cool, then remove from tins. Melt jam with lemon juice.

Step 10

Brush a thin layer at the bottom of the tartlet.

Step 11

Spread a thin layer of the whipped cream in the tartlet shell.

Step 12

Arrange the cut fruits, brush evenly with the jam glaze and serve
