Ingredients list for Fruit Cake

  • 1/2 cup Raisins
  • 1 1/2 cups Refined Flour
  • 1/2 cup Currants
  • 50 grams Glazed cherries chopped
  • 1 1/2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Cinnamon powder
  • 120 grams Butter
  • 8 teaspoons Sugar Free
  • 1 teaspoon Orange zest
  • 1/4 cup Orange juice
  • 1 tablespoon Orange marmalade
  • 2 Eggs whisked


  1. Preheat oven to 160ºC/325ºF/ Gas Mark 3. Grease an eight-inch round cake tin.
  2. Sift flour, baking powder, salt and cinnamon powder.
  3. In a pan add butter, Sugar Free, orange zest, orange juice and two third cup of water. Simmer it until the mixture is smooth.
  4. Stir in raisins and currants and continue to simmer for another five minutes. Cool.
  5. Add this to the sifted flour and mix. Mix in glazed cherries, orange marmalade and eggs.
  6. Pour this mixture into the greased tin and bake in the preheated oven for one and half hours.
  7. Insert a toothpick in the centre and if it comes out clean it indicates that the cake is baked.
  8. Cool and demould.
