Ingredients list for Fruit Cake
- 1/2 cup Raisins
- 1 1/2 cups Refined Flour
- 1/2 cup Currants
- 50 grams Glazed cherries chopped
- 1 1/2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1 teaspoon Cinnamon powder
- 120 grams Butter
- 8 teaspoons Sugar Free
- 1 teaspoon Orange zest
- 1/4 cup Orange juice
- 1 tablespoon Orange marmalade
- 2 Eggs whisked
Method
- Preheat oven to 160ºC/325ºF/ Gas Mark 3. Grease an eight-inch round cake tin.
- Sift flour, baking powder, salt and cinnamon powder.
- In a pan add butter, Sugar Free, orange zest, orange juice and two third cup of water. Simmer it until the mixture is smooth.
- Stir in raisins and currants and continue to simmer for another five minutes. Cool.
- Add this to the sifted flour and mix. Mix in glazed cherries, orange marmalade and eggs.
- Pour this mixture into the greased tin and bake in the preheated oven for one and half hours.
- Insert a toothpick in the centre and if it comes out clean it indicates that the cake is baked.
- Cool and demould.
