You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Fried Egg Manchego Recipe

  • Eggs 4

  • Onions 2 medium

  • Bacon rashers 4

  • Garlic 5-6 cloves

  • Olive oil 8 teaspoons

  • Red capsicum ,cut into small cubes 1 large

  • Tomatoes ,blanched and cut into small cubes 2 large

  • Salt to taste

  • Crushed black peppercorns 1 tsp + to sprinkle

  • Fresh parsley a few sprigs

  • Fresh basil leaves a few

  • Fresh mint leaves a few

  • A fresh mint leaves

Method

Step 1

Roughly chop the onions. Roughly chop bacon rashers.

Step 2

Heat a non-stick pan, add bacon and saute for 1 minute. Add onions, mix and saute. Crush garlic cloves and add, mix and saute.

Step 3

Heat 2 tsps olive oil in another non-stick pan. Break an egg into this pan and fry.

Step 4

Add red capsicum and tomatoes to the first pan, mix well and continue to saute.

Step 5

Remove the egg from the other pan and place it on a plate. Fry other eggs similarly.

Step 6

Add salt and crushed black peppercorns to the first pan. Roughly chop parsley, basil and mint leaves, add to the first pan and mix well.

Step 7

Transfer equal portions of this mixture into 4 serving plates. Place a fried egg on top of the vegetables in each plate, sprinkle little crushed peppercorns over the egg and serve hot.
