Ingredients list for Eve’S Pudding With Mango
- 500 grams Ripe Mangoes peeled and sliced
- 3/4 cup Refined Flour
- 1/4 cup Unsalted butter
- 1/4 cup Castor sugar (caster sugar)
- 1 Egg
- 1/4 teaspoon Vanilla essence
- 3/4 teaspoon Baking powder
- 1/4 cup Sugar
Method
- Preheat oven to 160°C.
- Cream butter with castor sugar until pale and soft. Beat in the egg and mix. Add vanilla essence. Sieve refined flour and baking powder onto this mixture.
- Mix with a palette knife in a cut and fold style. Take a pudding mould. Arrange the mango slices at the base. Sprinkle sugar over them. Put the pudding batter over and level the top.
- Bake in the preheated oven at 160°C for about one hour.
