Egg Salad Sandwich

Mixture of hardboiled eggs mixed with carrot, green capsicum, spring onions and green chutneys spread between brown bread slices.- Classic egg salad sandwich, with chopped hard boiled eggs, green onion, celery, mayonnaise and a dash of curry powder, served on toasted bread. Ingredients list for Egg Salad Sandwich

  • 4 Eggs hardboiled
  • 1 small Carrot grated
  • 1 medium Green capsicum finely chopped
  • 1-2 Spring onion bulbs finely chopped
  • 1-2 stalks Spring onion greens finely chopped
  • 16 Brown bread slices
  • to taste Salt
  • to taste Crushed black peppercorns
  • 3 tablespoons Green chutney
  • Butter for spreading
  • 8-12 Lollorosso lettuce leaves
  • to serve Tomato ketchup


  1. To prepare egg salad, finely chop hardboiled eggs and put into a bowl.
  2. Add carrot, capsicum, spring onion bulbs, spring onion greens, salt, crushed peppercorns and green chutney and mix well.
  3. Spread some butter on each bread slice.
  4. Place 1-2 lollo rosso lettuce leaves on 4 slices, spread egg salad mixture on top and cover with remaining slices.
  5. Cut into triangles and serve with tomato ketchup.
