By Sanjeev Kapoor 23 Oct 2015 in Recipes Course New Update Main Ingredients Seedless dates, Desiccated coconut Cuisine Fusion Course Desserts Prep Time 21-25 minutes Cook time 11-15 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Date And Coconut Fingers 15-20 Seedless dates finely chopped 2-3 tablespoons Desiccated coconut 4 tablespoons Milk 8-9 Digestive biscuits crushed a few drops Vanilla essence 5-6 Cashewnuts roasted and finely chopped 5-6 Walnuts roasted and finely chopped Method Place dates and milk in a deep non-stick pan, cover and cook on medium heat for eight to ten minutes or till the dates are soft. Allow to cool down and mash with hands, transfer into a bowl and refrigerate for thirty to forty minutes. Take it out of the refrigerator and add biscuits, vanilla essence, cashewnuts, almonds and walnuts and mix well. Divide into eight equal portions and shape into fingers. Spread the desiccated coconut evenly on a plate. Roll the fingers in the coconut and dust off any excess coconut. Serve immediately.
