Crispy Fried Yam

Steamed yam slices are gently flattened and deep-fried in ghee until golden, then seasoned with salt, white pepper, and lemon juice for a comforting, crispy treat. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • ½ kilogram purple yam
  • Ghee to deep fry
  • Salt to taste
  • ½ teaspoon white pepper powder
  • 1 teaspoon lemon juice

Method

  1. Peel, wash and cut yams into half inch thick slices. Steam the yam slices for ten to fifteen minutes or till almost done. Cool and gently press each slice between your palms to flatten slightly.
  2. Heat sufficient ghee in a kadai and deep-fry on medium heat till golden and crisp. Drain onto an absorbent paper.
  3. Transfer onto a serving dish, sprinkle salt, white pepper powder, a little lemon juice and serve hot.
