Ingredients
- 4 boneless chicken breasts
- 8 white bread slices
- ¾ teaspoon onion powder
- ¼ teaspoon paprika powder
- Crushed black peppercorn to taste
- 1 tablespoon garlic paste
- Salt to taste
- 1 tablespoon refined flour
- A few fresh thyme leaves
- 1 egg white
- Dried breadcrumbs as required
- Butter for basting
- Lettuce leaves as required
- Mayonnaise for drizzling
- Tomato slices as required
- Salad to serve
- Chips to serve
- Periperi sauce to serve
Method
- Cut the chicken into thin horizontal slices and transfer into a large bowl. Add onion powder, paprika, crushed black peppercorns, garlic paste, salt, refined flour,
thyme leaves and egg white and mix well. - Take dried breadcrumbs on a plate roll the chicken in it and set aside.
- Heat sufficient oil in a kadai, slide in the chicken pieces, a few at a time, and deep fry till golden brown and crisp. Drain on absorbent paper.
- Trim the edges of the bread slices and apply butter on both slices. Place a few lettuce leaves and 3-4 fried chicken pieces and drizzle mayonnaise on top.
- Place a few tomato slices and sprinkle salt and crushed black peppercorns on top. Cover with another slice of bread with the butter side facing down.
- Serve immediately with salad, chips and periperi sauce.
