Creamy Red Rice Risotto

Ingredients list for Creamy Red Rice Risotto

  • 1½ cups Red rice
  • 4 tablespoons Butter
  • 1 medium Onion sliced
  • 2-3 Garlic cloves finely chopped
  • 1 tablespoon Mixed herbs fresh, chopped
  • 6 cups Vegetable stock
  • to taste Salt
  • 10-12 Black peppercorns crushed
  • ½ cup Frozen green peas
  • ½ cup Cream
  • 1 tablespoon Mascarpone cheese
  • for garnishing Parmesan cheese shavings
  • for garnishing Fresh parsley sprigs


  1. Heat butter in a non-stick pan. Add onion, garlic and mixed herbs, mix well and sauté till onion turns golden brown.
  2. Add rice and sauté for 2-3 minutes. Add 1 cup vegetable stock, salt and crushed peppercorns and simmer till the stock is absorbed.
  3. Repeat the same with the remaining stock, adding 1 cup at a time. Add peas, mix and cook for 1 minute.
  4. Add mascarpone cheese and mix gently.
  5. Sprinkle parmesan cheese shavings, garnish with parsley sprigs and serve hot.
