Ingredients

  • 1 cup minced lamb
  • 1 egg white
  • 1 medium carrot, chopped
  • 1 small stick celery
  • 2 bay leaves
  • 4-5 black peppercorns
  • 1 sprigs fresh thyme
  • Salt to taste
  • 1 medium onion, chopped
  • 1 egg shell
  • 1 litre lamb stock

Method

  1. Mix together the minced lamb, onion, carrots, celery, bay leaves, black peppercorns, thyme, salt, egg white and egg shell in a deep pan.
  2. Add the lamb stock and simmer, stirring continuously, till froth rises to the surface.
  3. Place the saucepan on a tawa and simmer for atleast two hours, taking care not let the consommé come to a boil. Strain the consommé through a muslin cloth and serve piping hot.
