Ingredients
- 1/2 cup orange juice
- 4 tablespoons lemon juice
- 8-10 prawns (medium), shelled and deveined with tails intact
- Salt to taste
- Black pepper powder to taste
- 1 tablespoon minced garlic
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 3 tablespoons lemon liqueur (optional)
Method
- Heat sufficient water in a non-stick pan and bring it to a boil. Add prawns and boil for a minute. Strain and transfer them in a shallow bowl.
- Add orange juice, lemon juice, salt and pepper powder and mix well. Refrigerate to marinate for 20 minutes.
- Arrange the marinated prawns on a serving platter.
- To make dressing, take the leftover marinade in a bowl. Add garlic, parsley, olive oil, lemon liqueur and whisk well. Add salt and pepper powder and whisk till well blended.
- Pour dressing on the prawns and serve immediately.
