Ingredients list for Chocolate Sandwich Cookies
- 1 cup Refined flour (maida)
- 115 grams Unsalted butter
- 6 tablespoons Granulated sugar
- 1 Egg
- ? cup Unsweetened cocoa powder
- a pinch Salt
- FILLING
- 115 grams Unsalted butter
- ¾ cup Powdered sugar
- 3 tablespoons Cocoa powder
- Coating
- 2 cup Dark chocolate chopped
- 1 tablespoon Coconut oil
Method
- Preheat the oven to 180°C. Line a baking tray with parchment paper.
- To make the cookies, cream together the butter and sugar in a bowl till light and fluffy. Add the egg and beat well.
- Add the cocoa powder and beat till well combined. Add the flour and salt, mix and knead into a soft dough.
- Scrape the dough out onto a piece of parchment paper. Add a second sheet of paper on top and roll out the dough between the two sheets until it is a rectangle about one-fourth inch thick. Place the dough on a tray and freeze for thirty minutes or till firm.
- Cut the chilled dough into twenty small squares of two and a half inch thickness. Place them in evenly spaced intervals on the prepared tray.
- Put the tray in the preheated oven and bake for ten minutes. Remove from oven and cool.
- To make the filling, cream the butter in a bowl till soft.
- Sieve together the powdered sugar and cocoa powder into the bowl and beat till light and fluffy.
- Spread a spoonful of the filling on half the cookies, top with remaining cookies and refrigerate to chill.
- To make the coating, take the chocolate in a bowl. Add the coconut oil and heat in the microwave for thirty seconds. Remove from heat and stir till smooth.
- Dip the chilled cookie sandwiches in the melted chocolate, place on a parchment paper and refrigerate till set.
- Serve.
