Chinese French Fries

Crispy fries tossed in a savory mixture of soy sauce, chili flakes, and Szechuan pepper, topped with chopped scallions. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 1½ cups French fries 
  • 1 tablespoon oil
  • 4 spring onion bulbs, finely chopped
  • 6-7 mushrooms, sliced
  • 1 small carrot, cut into thick strips
  • 8-10 broccoli small florets
  • Salt to taste
  • 1½ tablespoons red chilli sauce
  • 2 teaspoons soy sauce
  • 2-3 spring onion greens, chopped
  • 1 tablespoon burnt garlic + garnish

Method

  1. Heat oil in a non-stick wok, add spring onion bulbs and sauté till translucent. Add mushrooms, toss well and cook for 1 minute.
  2. Add carrot, broccoli, toss well and add salt, mix well and cook for 1-2 minutes.
  3. Add red chilli sauce, soy sauce and French fries, toss well. Add spring onion greens and burnt garlic, toss well. Take it off the heat.
  4. Garnish with burnt garlic and serve hot.
