Ingredients for Chilli Bean Salad with Caramelized Walnuts Recipe

  • String Beans blanched 150 grams

  • French Beans blanched 150 grams

  • Toasted white sesame seeds for sprinkling

  • Toasted black sesame seeds for sprinkling

  • For caramelized walnuts

  • Walnut kernels 150 grams

  • Sugar 75 grams

  • Honey 2 tablespoons

  • Oil for deep-frying

  • For dressing

  • Pickled jalapeno 6-8

  • Red chilli sauce 2 tablespoons

  • Schezwan chutney 1 tablespoon


Step 1

Heat sufficient oil in a kadai.

Step 2

Heat 1 cup water in a non-stick pan, add walnut kernels and bring it to boil.

Step 3

Cut both the beans into long strips.

Step 4

Strain the water from walnut kernels.

Step 5

Heat ¼ cup water in the same non-stick pan, add sugar and honey and mix well. Add blanched walnut kernels and bring it to boil. Strain the nuts.

Step 6

To make dressing roughly chop pickled jalapenos. Mix red chilli sauce, schezwan chutney and jalapenos in bowl.

Step 7

Deep fry the walnut kernels in hot oil till crisp. Drain on absorbent paper.

Step 8

Mix both the beans in a large bowl, add the dressing and mix well.

Step 9

Arrange the beans on a serving platter, sprinkle white and black sesame seeds, top with caramelized walnuts and serve immediately.
