Ingredients
- 150 grams string beans, blanched
- 150 grams French Beans, blanched
- Toasted white sesame seeds for sprinkling
- Toasted black sesame seeds for sprinkling
For caramelized walnuts
- 150 grams walnut kernels
- 75 grams sugar
- 2 tablespoons honey
- Oil for deep-frying
For dressing
- 6-8 pickled jalapeno
- 2 tablespoons red chilli sauce
- 1 tablespoon Schezwan chutney
Method
- Heat sufficient oil in a kadai.
- Heat 1 cup water in a non-stick pan, add walnut kernels and bring it to boil.
- Cut both the beans into long strips.
- Strain the water from walnut kernels.
- Heat ¼ cup water in the same non-stick pan, add sugar and honey and mix well. Add blanched walnut kernels and bring it to boil. Strain the nuts.
- To make dressing roughly chop pickled jalapenos. Mix red chilli sauce, schezwan chutney and jalapenos in bowl.
- Deep fry the walnut kernels in hot oil till crisp. Drain on absorbent paper.
- Mix both the beans in a large bowl, add the dressing and mix well.
- Arrange the beans on a serving platter, sprinkle white and black sesame seeds, top with caramelized walnuts and serve immediately.
