Ingredients list for Chicken and Roasted Pepper Ragout
- 8-10 Chicken drumsticks
- 2 medium Red bell pepper roasted and cut into cubes
- to taste Salt
- to taste Crushed black peppercorns
- 2 tablespoons Paprika smoked
- Lemon zest of ½ lemon
- as required Olive oil 1 tablespoon +
- 3 medium Onions chopped
- 1 tablespoon Garlic chopped
- 1 tablespoon Refined flour (maida)
- 1½ cups Chicken stock
- ¼ cup Fresh cream
- 2 teaspoons Fresh parsley chopped
Method
- Take the chicken drumsticks in a bowl. Add salt, crushed peppercorns, one tablespoon paprika, one teaspoon cumin powder and lemon zest, mix well and set aside to marinate.
- Heat olive oil in a non-stick pan. Add onions and sauté till translucent. Add garlic, mix and sauté till onions turn golden.
- Heat some olive oil in another non-stick pan. Add the marinated chicken drumsticks and sear till evenly golden from both sides.
- Add flour to the onions, mix and sauté for a minute. Add the chicken stock, stir and bring to a boil.
- Add the remaining paprika, remaining cumin powder, salt and crushed peppercorns and mix well. Add the seared chicken drumsticks, mix well and cook till the chicken is fully done.
- Add the peppers and mix. Add the cream and parsley and mix well.
- Serve hot.
