Ingredients list for Chicken and Cheese Roll Ups
- 2 Boneless chicken breasts horizontally sliced into halves
- 1 cup Mozzarella cheese
- 2 tablespoons Cheese spread
- 1 tablespoon Cheese spread spiced
- 1 medium Onion
- 4-5 Pickled jalapenos
- for garnishing Fresh parsley 4-5 +
- to taste Salt
- to taste Crushed black peppercorns
- for greasing Oil
- for coating Bread crumbs
Method
- Preheat oven at 180ºC. Grease a baking tray.
- Combine mozzarella cheese, cheese spread, spiced cheese spread and onion in a bowl.
- Roughly chop jalapeno slices and add to the bowl.
- Roughly chop parsley sprigs and add to the bowl alongwith salt and crushed peppercorns and mix well.
- Place some cheese mixture on one side of chicken slices and spread evenly. Roll tightly and similarly prepare the other roll ups.
- Spread breadcrumbs on a plate. Sprinkle salt and crushed peppercorns on top and mix well. Coat the roulades in it and dust off the excess.
- Place roll ups on the greased baking tray, put the tray in the preheated oven and bake for 15-20 minutes.
- Cut into pieces and serve hot garnished with a parsley sprig.
