Ingredients list for Chicken With Walnuts
- 4 Chicken breast
- 1 medium Spinach chopped
- 4 medium Tomato chopped
- 3 tablespoons Olive oil
- 8-10 medium Button mushrooms sliced
- 2 medium Onions chopped
- 5-6 cloves Garlic chopped
- Salt
- 1/4 teaspoon White pepper powder
- 2 teaspoons Curry powder
Method
- Mix the egg, four tablespoons of cornflour, salt, one tablespoon soy sauce. Add the chicken pieces and set aside for half an hour. Mix the remaining cornflour in one cup of water.
- Boil the walnut kernels in sufficient water for two minutes. Drain and spread on absorbent paper to dry.
- Heat sufficient oil in a wok and deep-fry marinated chicken for two to three minutes. Drain on absorbent paper. Heat three tablespoons oil in a wok.
- Add the garlic and red chillies and stir fry for half a minute. Add the onion, celery, button mushrooms, walnut kernels and continue to stir fry for a couple of minutes.
- Add the remaining soy sauce, sugar, MSG, chicken stock and salt. Bring the mixture to a boil and stir in the cornflour mixture. Cook on medium heat for a minute or until the sauce starts to thicken, stirring continuously.
- Add the fried chicken, all the capsicum pieces and continue to cook for a couple of minutes on high heat, tossing and turning continuously.
- Transfer into a warm platter and serve hot.
