Ingredients list for Chicken Nachos
- 250 grams Boneless chicken
- 1 cup Nachos
- 1½ teaspoons Oil
- 1 medium Onion
- 7-8 Garlic cloves chopped
- 1 medium Green capsicum
- 1 medium Red bell pepper
- to taste Salt
- to taste Crushed black peppercorns
- 2 teaspoons Paprika powder
- ½ cup Fresh cream
- 2-3 Pickled jalapenos sliced
- ¾ cup Mozzarella cheese grated
Method
- Preheat oven at 200ºC.
- Heat oil in a non-stick pan.
- Slice onion.
- Add garlic to the pan and saute for a minute.
- Cut capsicum into juliennes.
- Add sliced onion to the pan and toss for a minute.
- Cut bell pepper into juliennes.
- Add capsicum and pepper juliennes to the pan and toss to mix. Saute for 2 minutes.
- Cut chicken breasts into juliennes and add to the pan. Mix well and cook for 2-3 minutes.
- Add salt, crushed peppercorns and paprika powder and toss to mix. Cook till the chicken is fully done.
- Add cream and mix well. Switch off heat.
- Place nachos in a glass baking dish. Top with cooked chicken mixture, jalapeno slices and mozzarella cheese. Put dish in preheated oven and bake till the cheese melts.
- Serve hot.
