Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken And Corn Croquette Recipe

  • Chicken mince 1 cup

  • Chives chopped a few

  • Fresh bread crumbs 1 cup

  • Creamed sweet corn 1/2 cup

  • White peppercorns crushed 1/2 teaspoon

  • Cornflour/ corn starch 2 tablespoons

  • Salt to taste

  • Oil 2 tablespoons

  • Onion chopped 1 medium

  • Tomato chopped 3 large

  • Yellow capsicum seeded and chopped 1/2 small

  • Green chilli seeded and chopped 2-3

  • Fresh coriander leaves chopped a few

  • Jalapeno chopped 1 small

  • Lemon juice 1 tablespoon

  • Salt to taste

Method

Step 1

In a large bowl combine chicken mince, chives, breadcrumbs, creamed corn, crushed peppercorns, cornstarch and salt and mix well. Divide into equal portions and shape into sausages about four inches long.

Step 2

Refrigerate the croquettes for about an hour to allow them to set. To make the salsa mix onion, tomatoes, yellow bell pepper, green chillies coriander leaves, jalapeno pepper in a bowl. Add lemon juice and salt and mix again.

Step 3

Keep aside. Preheat oven to 180 ºC. Line an oven tray with aluminum foil and brush lightly with oil. Place croquettes on the tray and bake in preheated oven at 180 ºC for eight to ten minutes basting occasionally with oil. Serve hot with salsa.
