Ingredients list for Cheesy Pesto and Egg Melts
- for garnish Mozzarella cheese grated, 4 tablespoons +
- 4 tablespoons Processed cheese grated
- 2 tablespoons Parmesan cheese grated
- 1 tablespoon Pesto sauce
- 8 Eggs bolied
- 8 White bread slices
- to taste Crushed black peppercorns
- a pinch Salt
- as required Butter
Method
- Grate eggs into a bowl. Add pesto sauce, 3 tablespoons mozzarella cheese, crushed peppercorns, salt, processed cheese and Parmesan cheese and mix well.
- Apply butter on 4 bread slices. Top with a generous portion of egg-cheese mixture, sprinkle remaining mozzarella cheese on top and cover with remaining 4 bread slices. Spread some more butter on top.
- Heat a non-stick sandwich grilling machine. Place the sandwiches on it, cover and grill till grill marks appear on both sides and the cheese melts.
- Cut into rectangles and serve hot.
