Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheesecake Brownies-Cook Smart Recipe

  • Cream cheese 200 grams

  • Dark chocolate 100 grams

  • Butter 75 grams

  • Powdered sugar 125 grams

  • Eggs 3

  • Vanilla essence 1 1/2 tablespoons

  • Refined flour (maida) 1/2 cup + for dusting

  • Cocoa powder 1 tablespoon

  • Castor sugar 5 tablespoons

  • Egg yolk 1

  • Chocolate chips 1/4 cups

  • Oil for greasing

Method

Step 1

Preheat oven at 180º C.

Step 2

Put dark chocolate with butter in a non-stick pan and cook on medium heat, stirring continuously, till the chocolate melts. Transfer into a bowl.

Step 3

Add powdered sugar and mix well. Break eggs one at a time and add, stirring continuously. Add ½ tablespoon vanilla essence.

Step 4

Sieve together ½ cup refined flour and cocoa powder into the bowl and fold in lightly till well blended.

Step 5

Put cream cheese into another bowl and whisk well. Add castor sugar, remaining vanilla essence and egg yolk and whisk well.

Step 6

Add chocolate chips to the chocolate-flour mixture and mix well.

Step 7

Grease a round cake tin with oil and dust with some dry flour. Shake off excess.

Step 8

Pour the chocolate-flour mixture, spoon dollops of cream cheese mixture on the top, keeping some distance between each dollop. Take a fork and swirl it around the mixture in the tin to create a marble effect.

Step 9

Place the tin in the preheated oven and bake for 30-35 minutes.

Step 10

Remove from the oven, cool down to room temperature, remove from the tin and transfer onto a serving plate. Cut into wedges and serve warm.
