Ingredients list for Cheese Flan
- 200 grams Cream Cheese softened
- 1 cup Sugar
- 2 1/2 cups Milk
- 2 inches Cinnamon stick
- 1/2 cup Condensed milk
- 5 Eggs
- 1 teaspoon Vanilla essence
- 1/8 teaspoon Salt
Method
- To make caramel, heat sugar and ¼ cup water in a non-stick pan, on medium heat, stirring continuously till sugar dissolves.
- Dip a silicon brush in cold water and rub on the sides of the pan occasionally so that the sugar browns evenly.
- To make flan, heat milk in a deep non-stick pan, add cinnamon and cook till milk comes to a boil. Switch off heat, discard cinnamon and cool down to room temperature.
- Preheat oven to 180° C.
- Take cream cheese in a bowl and whip it till soft and smooth. Add condensed milk and mix well.
- Break 2 eggs and add and beat with an electric beater. Add vanilla essence and a pinch of salt and beat again.
- Put caramelized sugar equally into 4 ramekin moulds and set aside to cool down to room temperature.
- Break remaining eggs and add and continue to beat till smooth. Add milk mixture and beat again.
- Once the caramelized sugar in the ramekin moulds is set, put the milk-cream cheese mixture in them equally. Place the moulds in a baking tray, fill it with sufficient water, cover with an aluminum foil, place it in preheated oven and bake for 50-55 minutes.
- Remove the moulds from the water bath and rest for 15 minutes. Cool to room temperature, invert the flans on a serving platter and serve warm.
