Ingredients list for Carrot-Coconut Rice
- 2 1/2 cups Cooked Rice
- 1 medium Carrot grated
- 2 tablespoons Oil
- 1 teaspoon Cumin seeds
- 1 teaspoon Mustard seeds
- 1 teaspoon Split Bengal gram (chana dal)
- 1 teaspoon Split black gram skinless (dhuli urad dal)
- 3-4 Dry red chilies
- 4-5 Curry leaves
- 1 cup Scraped coconut
- 1 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 1 cup Fresh coriander leaves chopped
Method
- Heat oil in a non-stick pan. Add cumin seeds, mustard seeds, chana dal, urad dal, red chillies and curry leaves and saute for a minute.
- Add coconut, carrot, red chilli powder, coriander powder, turmeric powder and salt and mix well and cook till the carrots get cooked.
- Add the rice and toss well. Serve hot garnished with coriander leaves.
