By Sanjeev Kapoor 21 Mar 2016 in Recipes Course New Update Main Ingredients Cooked Rice, Carrot Cuisine Indian Course Rice Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Carrot-Coconut Rice 2 1/2 cups Cooked Rice 1 medium Carrot grated 2 tablespoons Oil 1 teaspoon Cumin seeds 1 teaspoon Mustard seeds 1 teaspoon Split Bengal gram (chana dal) 1 teaspoon Split black gram skinless (dhuli urad dal) 3-4 Dry red chilies 4-5 Curry leaves 1 cup Scraped coconut 1 teaspoon Red chilli powder 1 teaspoon Coriander powder 1/4 teaspoon Turmeric powder to taste Salt 1 cup Fresh coriander leaves chopped Method Heat oil in a non-stick pan. Add cumin seeds, mustard seeds, chana dal, urad dal, red chillies and curry leaves and saute for a minute. Add coconut, carrot, red chilli powder, coriander powder, turmeric powder and salt and mix well and cook till the carrots get cooked. Add the rice and toss well.
