Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Caramelised Pumpkin Chicken Curry Recipe

  • Red pumpkin peeled and sliced thinly 200 grams

  • Boneless chicken breasts 4

  • Oil 4 tablespoons

  • Salt to taste

  • Ginger-garlic paste 1 1/2 tablespoons

  • Roasted cumin powder 1 teaspoon

  • Tomato puree 1/2 cup

  • Green chilli 1/2

  • Garam masala powder 1/2 teaspoon

  • A fresh mint sprig for garnish

Method

Step 1

Heat 2 tbsps oil in a non-stick pan, add pumpkin slices and little salt, mix, cover and cook on high heat till pumpkin is cooked and caramelises.

Step 2

Heat 2 tbsps oil in another non-stick pan. Cut chicken into medium sized pieces and put in this pan and sauté for 2 minutes. Add ginger-garlic paste and mix. Cover and cook for 2 minutes.

Step 3

Add cumin powder to the chicken and mix. Cover and cook.

Step 4

When the pumpkin gets slightly burnt, put it into a mixer jar. Add tomato puree and grind. Add green chilli and grind again.

Step 5

Add ½ cup water to the chicken and mix. Add the pumpkin paste and mix. Add salt and garam masala powder and mix. Cover and cook on low heat for 5-7 minutes or till chicken is done.

Step 6

Transfer into a serving bowl and serve garnished with fresh mint sprig.
