California Salad

A vibrant, refreshing salad with grated carrots, cherry tomatoes, raisins, and almonds, dressed in a tangy orange-honey vinaigrette. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 large lettuce, torn and soaked in chilled water
  • 4 medium carrots, peeled and grated
  • 18-20 cherry tomatoes, halved
  • 4 celery stalks, thinly sliced
  • 1 cup seedless raisins
  • 1 cup almonds, blanched and halved
  • 4 tablespoons chironji
  • 2 tablespoons sesame seeds (til), roasted
  • Salt to taste
  • 15-20 black peppercorns, freshly ground

For dressing

  • 3 tablespoon extra-virgin olive oil
  • 2 tablespoons cider vinegar
  • 2 teaspoon honey
  • 4 tablespoons orange juice

Method

  1. Place all the salad vegetables, raisins, almonds, charoli and sesame seeds in a large bowl.
  2. Place all the dressing ingredients in a small glass jar and shake well to mix.
  3. Pour the dressing over the salad and toss well too mix. Serve chilled, sprinkled with salt and freshly ground peppercorns.
