Ingredients list for Caesar Devil Eggs
- 4 Eggs hardboiled and peeled
- 1 tablespoon Garlic chopped
- 1 teaspoon Capers
- 1 teaspoon Mayonnaise
- 1 teaspoon Red wine vinegar
- 1 teaspoon Parmesan cheese powder
- 1 tablespoon Olive oil
- to taste Salt
- to taste Crushed black peppercorns
- 2-3 Lettuce leaves romaine, torn
Method
- Halve eggs, separate yolks and put into a bowl and place the whites on a serving platter.
- Mash the egg yolks, add garlic, capers and whisk with an electric beater. Add mayonnaise and mix well.
- Add red wine vinegar and whisk. Add parmesan cheese powder and whisk again. Add olive oil and whisk. Add 1 tablespoon water and whisk well.
- Add salt and crushed peppercorns and whisk well.
- Fill a piping bag fitted with star nozzle with the yolk mixture and pipe it out into the egg white shells. Place a torn lettuce leaf over reach shell.
- Serve immediately.
