Ingredients list for Blueberry Tart

  • 2 cups Blueberries fresh
  • 1 cup Sour cream
  • as required Short crust pastry dough
  • ¾ cup Sugar
  • 1 Egg
  • 2 teaspoons Vanilla essence
  • 2 tablespoons Refined flour (maida)
  • ¼ teaspoon Salt

Method

  1. Preheat oven to 180ºC.
  2. Spread the short crust pastry dough in a rectangle tart mould, discard the excess dough and dork the crust. Place a butter paper on it, fill with beans and blind bake in preheated oven for 15-20 minutes.
  3. Whisk together sour cream, sugar, egg, vanilla essence, flour and salt in a bowl till smooth. Add blueberries and mix.
  4. Remove the baked tart shell from oven and discard the butter paper and beans. Place it on a baking tray and fill it with the sour cream-blueberry mixture.
  5. Place the tray in the preheated oven and bake for 15-20 minutes. Remove from oven and cool.
  6. Serve.
